| Description | Highland Park is one of only a few remaining distilleries that malts its own barley. The process involves soaking the grain and then when germination starts, spreading it on the floor of the malting room while peat furnaces beneath keep the temperature right and flavour the grains. The peat smoke exits through these chimneys. |
